Chevy - our fully qualified trained New York chef was looking for "something different" for his family business. Friends introduced him to wood fire pizzas and this new passionate affair took him on a great journey of discover which eventually lead Chevy all the way back to New Zealand!
The obsession started, and knowledge was needed - after investigation Chevy was enrolled back at school and trained under Scott Cosentino of Staten Island Pizza School who promises perfection and winner of the WORLDS BEST PIZZA! In true kiwi style - Scott fell in love with the idea of New Zealand and came over and helped Chevy personally set up and build the oven by hand.
The wood fire oven are rated to 2000 degrees to cook in traditional Neapolitan style weighing approximately five and a half tone and decorated in Upper Hutt river stones and using only Manuka logs - just to add a bit of kiwi style to it. The wood fire oven is the one and only cooking method at the ART OF PIZZA no nasty deep fryers or microwaves here thank you very much! A true New York styled pizza in an authentic Neapolitan style oven - now that is true love!
The dough is hand crafted and stretched by hand using coarse semolina flour as apposed to standard white flour. The high protein white flour and coarse semolina flour is what adds to the magic of ART OF PIZZA's famous pizza bases.
Chevy secret sauce, which he lovingly calls his "pizza gravy" is made up of locally sourced fresh ingredients and is the pivotal part of all of his amazing pizzas.
